This handcrafted amino paste was fermented with Koji grains a traditional fermentation tool and technique used in Japan to make Miso. The ingredients in this batch were inspired by a local food truck that loves to server and amazing to go bowl of ramen. After chatting with the chef and business owners we were inspired to revisit a "traditional" miso style amino paste, using mainly soy beans in combination with other ingredients.
In this batch we went with soybeans and a combinations of open flame charred peppers, garlics, and toasted spices familiar with the food truck chef. This batch of miso produces an beautiful toasted amber tamari syrup that pooled at the top of the miso which left a longing impression for the maturity of this ferment. Warning will make a seasoned chef begin to uncontrollably tear up from joy, taste test in private.
***Ferments are prepared with zero preservatives or additives. Product carries in own biome of healthy bacteria and the correct ratio of salt to naturally preserve the final product. Refrigerate after open to extend life.
